Carrot Pasta Sauce

Dietitian’s Corner:

Carrots are a great source of fiber and B vitamins like niacin and B6. Carrots come in all different colors. Try to eat a variety of different colored carrots, so you can consume a variety of different antioxidants.

Tip: I highly recommend using your own homemade chicken broth. Here is our easy instant pot chicken broth recipe. We like to prepare a large batch and freeze into ½ cup and 1 cup portions for when we need it. The silicone molds we use for this are listed below.


Ingredients:


1 lb carrots

5​​​​ Tablespoons olive oil

1 onion

4 cloves garlic

4 ½ cups chicken broth

2 teaspoons Worcestershire sauce

½ teaspoon salt

½ teaspoon pepper

1 teaspoon red pepper flakes

4 Tablespoons tomato sauce

1 lb penne pasta

Parmesan cheese for garnish



Directions:


  1. Add olive oil, sliced carrots, onions, and garlic to a large pot over medium heat for 10 minutes.
  2. Add Worcestershire sauce, salt, pepper, chicken broth, red pepper flakes, and tomato sauce and turn to low and let simmer for 20 minutes or until carrots are soft.
  3. Blend with an immersion blender or cool and add to a blender. May blend until smooth if desired.
  4. Serve with cooked penne pasta and parmesan cheese, enjoy!
